The three things that make it expensive
The header. A bay usually replaces a smaller opening, and a wider opening in a load-bearing wall needs a larger beam. That is engineering, temporary support and carpentry, and it is why converting a flat window to a bay costs two to three times replacing an existing bay.
Support underneath. A bay carries its own weight plus whatever sits on the seat, cantilevered off the wall. It is carried either by cables anchored to the header above, or by knee braces below, or by a small foundation extension. Cables are the usual answer and they must be tensioned correctly.
The roof. Any projection needs a roof, flashing where it meets the wall, and insulation in the cavity. This is the part most often done badly, and a bay window roof that leaks does so into the seat cavity where it is invisible until the drywall below stains.
Where they leak
Bay windows are one of the more common sources of hidden water damage in a house, and almost always in the same two places.
The roof-to-wall flashing. Step flashing woven into the siding, not a bead of sealant. Sealant fails in five years; flashing does not.
The seat, underneath. The bottom of the projection needs to be insulated and air-sealed, and it needs a proper drainage detail at the front edge. Uninsulated bay seats are the reason the room is cold and the reason condensation forms inside the cavity.
If you are buying a house with an older bay window, look at the ceiling of the room below it and at the corners of the seat inside. Both tell you what has been happening.
Bay, bow, or garden
Bay is three panels: a large fixed centre and two angled sides that usually open. Projects further, gives a deeper seat, and is the most common.
Bow is four to six equal panels in a gentle curve. Wider, shallower projection, and more expensive because there are more units and more mullions.
Garden window is a small glass box, typically over a kitchen sink, with glass on five sides including the top. Cheap by comparison, excellent for plants, and a significant thermal weak point.

Does a bay window add value?
It adds light and it adds usable floor area in a modest way, and it changes the exterior meaningfully. Appraisers do not generally give it a line item; buyers do notice it. Treat it as something you do for how the room feels.
Do I need a permit?
For a like-for-like bay replacement, often not. For converting a flat window to a bay, almost always, because it alters the structure of a load-bearing wall.
How long does the work take?
A like-for-like replacement is one to two days. A conversion is three to seven days, plus interior finishing and painting.
Can the seat be used for storage?
Yes, and it is the natural place for it. Ask for the cavity to be properly insulated and air-sealed first, and for the storage to be accessible from inside the room rather than needing the seat lifted off entirely.
Is a bay window cold?
It has more glass and more exposed surface than a flat wall, so it is inherently the coolest part of the room. What makes it genuinely cold is an uninsulated seat cavity, which is common and fixable, and is worth checking before adding a radiator.
